Also in this video, we’ll learn a little more about glucose. Glucose is like our body’s primary fuel. Every cell needs it to function properly. We get glucose mainly by eating foods we call carbohydrates, such as bread, pasta, potatoes, rice, and also foods containing sugars, such as fruits, sweets, and desserts. You might think that the more glucose, the more energy, but that’s not quite the case. If you deliver too much glucose to your body at once , what we call a glucose spike occurs. Imagine a roller coaster: your glucose levels rise very quickly and then plummet. This isn’t something that only affects people with diabetes; in fact, it affects most of us, about 80% of the population. And unfortunately, these spikes and dips have consequences that can seriously harm our physical and mental health. Few people realize this, but these spikes can cause persistent fatigue, intense cravings, a feeling of mental fog, and even mood swings. These spikes and dips leave us exhausted, hungry, and unfocused. Dr. Jessie Inchauspé’s main idea is that it’s not what you eat, it’s how you eat. She suggests that the order and combination of foods are as important, if not more so, than the type of food itself. She doesn’t advocate eliminating entire food groups like carbohydrates or sugars, but rather learning to consume them intelligently to minimize these glucose spikes.
